It is a typical Calabrian salami obtained from the perfect combination of pork meat and pork lard, hot and sweet pepper. The peculiarity of 'nduja from Spilinga is to be more balanced than the other Calabrian 'ndujas: in your mouth you do not feel just fire, but spicy scent that leaves space to the delicous flavor of pork meat and lard too. Great if spread on hot bread, wonderful if additined to simple tomato or just to a fried onion to seasoning a dish of spaghetti.....a poem for your palate.
