In this dish you can find all intense and wonderful flavors of Sicily: diced eggplants are browned in sunflower seeds oil and added only after cooking to a special sauce obtained by frying celery, garlic, onion, olives, capers, almonds, pine nuts, raisins, fleshy peppers and pulpy tomatoes. Once all these ingredients are amalgamated, they are made bittersweet by the addition of sugar and red wine vinegar.....from all this emerges a poem of flavors, a medicine for the soul!
